SPECIFICATIONS:

■■ VEX2 (HOT TOP):

1 - 12" x 24" (305 mm x 610 mm) 5 KW cast hot top

thermostatically controlled. Temperatures range from 340°

to 800°F (171° to 427°C). Provided with clean out grooves

at left and right edges of range top. Hot top not suitable

for griddle work. (Available in single phase only.)

■■ VEX3 (HOT PLATES):

⁄2" (241 mm) diameter, infinite heat controlled 2 KW

round cast* surface units supported in top sections of

porcelain enameled steel. Optional high speed round

tubular surface units are available for use only with 208 or

240 volts. High speed round tubular surface units are

not recommended for stock pot work. Total 4 KW input

for range top.

*The 9

⁄2" round cast surface units are identified as E.G.O.

energy saving units. A separate thermostat is built into each

unit. It is set at 820° to 850°F. When a unit dial is set at the

top range of the infinite heat switch, and a pan or pot

containing food is placed on the unit, the unit delivers

2,000 watts at a temperature lower than 800°F. When the

cooking utensil is removed or boils dry, heat is no longer

carried from the unit and the temperature rises. When the

unit reaches from 820° to 850°F the wattage is cut back to

950 watts, a 52.5% reduction.
